Preparation
Preheat the oven to 180 0C.
Wash the apples, peel them, remove the core and cut them into small pieces. Set aside in a bowl.
Place the dates, apricots, almonds and walnuts in a blender and chop. Add the fruit mixture to the apple.
Add the lemon juice and zest and the cinnamon powder. Mix the ingredients together and leave to stand while you prepare the rice sheet.
Pour hot water into a bowl (wider than the size of the rice sheet) and soak the rice sheets individually to soften them. Drain them and remove the excess water with a cloth.
Line a baking tray with 1 sheet of greaseproof paper, lay out the rice leaves and fill with the fruit mixture prepared earlier. Brush with beaten egg.
Place in the oven to cook for about 20 minutes.
Remove from the oven, sprinkle with cinnamon and serve.
