Preparation
Put the turkey in a bag with the lemon juice, the whole peel, the crushed garlic, rosemary, salt and pepper.
Rub the turkey well, close the bag and put it in the fridge for at least 30 minutes.
For the green sauce, mix all the ingredients in a bowl and place in the fridge for a day, remove 30 minutes before serving.
Heat the grill well and grill the turkey, allowing it to set.
Serve the grilled turkey with the green sauce.
