Preparation

Arrange the different varieties of flour, including rye and whole wheat, and the ground linseed in a bowl.

Heat the water. Add the fresh yeast and dissolve it.

Gradually add the water to the flour mixture and knead until the dough comes away from the bowl and has a soft texture. Cover the bowl and leave the dough to rise for about 3 hours (until it has approximately doubled in size).

While you're waiting for the pasta to cook, prepare the remaining spices. Remove the pits from the dates and chop them together with the walnuts using a chopper.

Check the dough after about 3 hours. Add the mixture of dates and walnuts and knead again.

Preheat the oven to a moderate temperature, approximately 1700C.

Bake the bread in the oven for about 15 to 20 minutes.

When cooked, remove from the oven, leave to cool and cut into thin slices.
