Preparation
Pour the fruit juice and honey into a saucepan. Mix and heat over low heat.
When it comes to the boil, add the agar agar flakes and stir with a whisk for about five minutes until the flakes dissolve.
Remove from the heat and add the powdered gelatine. Mix until dissolved.
Arrange the mixture in a silicone jelly-roll mould, with the desired shape, and refrigerate until solidified, for about six hours.
Unmould and sprinkle with grated coconut and/or citrus zest.
