Preparation
Preheat the oven to 180º C. Sift the brown rice flour and baker's yeast into a bowl.
Add the cinnamon and lemon zest and mix all the ingredients together.
Separate the egg whites from the yolks and whisk them together with a pinch of salt. Set aside.
In another bowl, add the honey, rice drink, coconut oil and egg yolks. Whisk until you have a creamy liquid.
Gradually add the flour mixture without stopping beating until you have a homogeneous dough. Carefully fold the egg whites into the mixture.
Pour the dough into silicone doughnut molds and bake for about ten minutes. After baking, remove the doughnuts from the oven and leave to cool.
Brush some of the doughnuts with the melted coconut oil and sprinkle with coconut shavings. Cover the remaining doughnuts with the chocolate melted in a bain-marie. Enjoy!
Tips:
Replace the rice drink with a vanilla, banana or chocolate-flavored soy drink for donuts with an original taste.

- Brown rice flour 120 gr
- Honey 50 gr
- 2 large eggs
- Natural rice drink with no added sugar 50 ml
- Extra virgin coconut oil 1 tablespoon
- Baking powder/granulated yeast 1 teaspoon
- Salt 1 pinch
- Lemon (grated rind) 1 large
- Cinnamon 2 teaspoons
For the cover:
- Extra virgin coconut oil 1 dessert spoon
- Coconut chips 40 gr
- Chocolate with 85% cocoa 50 gr
