Preparation

Wash the zucchini and cut it into wide, thin strips lengthways. Use 2 of the zucchini strips, preferably the peel, cut them into strings and set aside.

Put the curd cheese in a bowl and break it up with a fork. Add a squeeze of lemon juice to taste, a pinch of salt and pepper and the chopped parsley. Mix all the ingredients together.

Make straws with the strips of zucchini, tie them together with the zucchini string and fill them with the curd mixture.

To finish, garnish with the nuts and basil leaves.
