Preparation

Wash the vegetables very well and prepare them. Peel them if necessary and cut them into small pieces.

Bring a pan of water to the boil and let it simmer. Once boiling, add the vegetables and cook.

When the vegetables are cooked, use a hand blender to blend them into a puree.

Season with salt and pepper and add the coriander and olive oil.

As a suggestion for a starter - Tomato cream with cucumber sticks (8 People - 50kcal per person): After the preparation mentioned above, arrange the tomato cream in small bowls. Prepare the cucumber: wash it and cut it into small sticks. Serve with the tomato cream.

For a light meal - Tomato cream with poached egg (4 people - 180kcal per person): When the tomato cream is cooked, add the whole eggs. Cook for about 2 minutes.
