Preparation
Remove the pits from the dates. Put the dates and coconut oil in a saucepan and simmer for about 2 minutes, until they are soft and the coconut oil has melted. Stir the 2 ingredients together as the coconut oil melts to avoid burning the dates.
Place the cashew paste, raw cacao powder, chia seeds, date mixture and coconut oil in a food processor and add about 0.5 dl of water. Blend until you have a smooth, paste-like mixture.
Pour the mixture into a saucepan and cook over a low heat, stirring continuously until the mixture comes off the bottom of the pan. Remove from the heat and leave to cool.
When the brigadeiro paste is cold, shape into small balls. You can use your hands or, if you prefer, 2 teaspoons.
Coat the balls in coconut shavings or grated coconut or 85% cocoa chocolate shavings, to taste, to cover the entire surface. Refrigerate for about 8 hours.
After chilling, place the balls in the paper moulds and serve them cold.
