Preparation

Lightly sauté the onion and garlic in the olive oil and add the meat. Stir with a wooden fork to loosen the minced meat and allow it to cook thoroughly.

When the meat is cooked and loose, add the chopped parsley, oregano, tomato concentrate, salt and pepper, stirring constantly. Cook for another 20 minutes and stir. If the meat dries out too much, you can add a little wine or water.

Separately, mix the grated bread and cheese and add to the minced meat. Mix well.

Wash the peppers and cut off their tops. Remove the seeds and white parts. Stuff the peppers with the meat mixture, dividing it equally among the 4 peppers.

Cover the peppers with a slice of mozzarella cheese and place them on a baking tray.

Preheat the oven and insert the peppers when hot.

 Let it brown for 20 minutes over medium heat.

Serve with a salad.
