Ingredients
- 120 g Medjool dates;
- 2 tablespoons of cashew paste:
- 2 tablespoons of coconut oil;
- 1 tablespoon of raw cocoa powder;
- 3 shallow tablespoons of chia seeds;
- Water to taste;
- Coconut chips, grated coconut and 85% cocoa chocolate shavings, to taste;
- 12 paper shapes for brigadeiros.
How to prepare: step by step
Our brigadeiros are very easy to make.
- Remove the stones from the dates. Put them in a saucepan with the coconut oil and simmer for about two minutes until they are soft and the coconut oil has melted, stirring the two ingredients together to avoid burning the dates.
- Place the cashew paste, raw cacao powder, chia seeds, date mixture and coconut oil in a food processor and add about 0.5 dl of water. Mix until you get a paste-like, homogeneous mixture. Pour into a saucepan and cook over a low heat, stirring continuously until the brigadeiros mixture comes away from the bottom of the pan. Remove from the heat and leave to cool.
- When the brigadeiros paste is cold, shape into small balls (you can use your hands or two teaspoons).
- Coat the brigadeiros in coconut shavings or grated coconut, or 85% cocoa chocolate shavings, to taste, to cover the entire surface. Refrigerate for about eight hours.
- Place the balls on paper trays and serve cold.
